Wollersheim Distillery just released three unique spirits on January 29, 2021. The spirits are available at the distillery and online at wollersheim.com for local pick up.
Coquard Brandy: Barrel #1225
Coquard Brandy was the first spirit we ever distilled and the first spirit we released to the public in 2013. As was the case then, this Brandy is Wisconsin-made from Wisconsin white grape wine, distilled in our copper pot stills and aged in Wisconsin Oak Barrels. This Brandy is complex and has a delicate and floral aroma. Barrel #1225 was harvested after being aged for over 6 years and was bottled at 93.4 proof. This is our longest aged Coquard released to date. This cognac-style All Wisconsin Brandy is best enjoyed neat. This spirit will be available at Wollersheim on the day of release with limited quantities arriving in Wisconsin stores in February.

Curiosity Collection #5: Round Top Rye Finished in Port Barrels
Round Top Rye is a classic, full-bodied American Rye Whiskey, balancing the spice of the rye with the sweetness of American oak. The grains for Round Top Rye are always grown just down the road from our distillery, but this special iteration of that Wisconsin straight rye whiskey has a unique twist, in that it was finished in freshly emptied Wollersheim Winery Port Barrels. This recipe of 66% Rye, 22% Corn, and 12% malt has been aged for 3 years and 291 days, and spent more than a year of that time inside of the Port Barrels. This unique Wisconsin Rye Whiskey is great for a unique twist on your favorite Rye cocktails, or for sipping. This spirit will be available at Wollersheim on the day of release with limited quantities arriving in Wisconsin stores in February.

Pear Eau de Vie
Pear Eau de Vie is an unaged Brandy distilled from Wisconsin pears. The pears, like grapes, are crushed and fermented into a pear wine before they are distilled on our copper pot stills. Pear Eau de Vie is a delicious and unique way to diversify your cocktail menu. Pictured is the “Pear Bear”, a simple but tasty mule-style drink made with Pear Eau de Vie, Ginger Beer, and Cherry Bark Vanilla Bitters. Pear Eau de Vie will be exclusively available at Wollersheim.
