Introducing Wollersheim Distillery’s Bottled-In-Bond Wisconsin Straight Bourbon Whiskey!

In the famous words of the Swedish rock band Europe, “It’s the final countdown”. And no — things will never be the same again.

On Nov. 16th, 2019 we will be releasing our first Bourbon and we are finally ready to share all the details that we have been keeping tucked under our seasonally appropriate hats, like the bottle pictured above!

The big reveal outside of the bottle itself is the fact that our first Bourbon will be our first registered Bottled-in-Bond product. Now, if you’re not a whiskey aficionado or just haven’t heard of the term, we would be delighted to explain exactly what it is, and why we did it.

The Bottle-in-Bond Act was written into law in 1897 as a reaction to merchants doctoring inferior whiskey to sell at the market to consumers. The Bottled-in-Bond label became a way for the government to guarantee the authenticity of a product and provided a tax incentive to the makers of the product for participating in the program. It can be applied to any spirit, but is most commonly associated with whiskey.

But not just any product can be a Bottled-in-Bond product, which is why it is commonly viewed as an endorsement of a quality by many. In order for a spirit to receive the Bottled-in-Bond label, it must satisfy all of the following requirements…

  • It must be the product of one distillation season (Spring or Fall)
  • It must be made by one distiller at one distillery
  • It must be aged at 100 proof for a minimum of 4 years
  • It must be made in the United States
  • It must identify where it was distilled and bottled
  • It must be aged in a federally bonded facility with government supervision

We took those requirements one step further and decided to age the Bourbon in all Wisconsin Oak from one family farm and received all the corn and rye from one single farmer about a mile down the road.

While it may seem like a lot of hoops to jump through we truly think it’s worth it, because in the end you get a product that is higher quality, higher proof, and shows the skills of our distiller along with the change in crops from year to year. It really reflects the individual vintage approach we have developed making wine here on our hillside. We showcase those beliefs and the season with the additional batch sticker, which is reminiscent of the old Wisconsin Tax Stamp from the past.

Wisconsin Straight Bourbon Whiskey was released on Nov. 16th, 2019 at Wollersheim Distillery and has sold out at the distillery. The next batch of Bourbon will be released at the distillery in June 2020.
