As the holidays approach and our cellars settle into another Wisconsin winter, we’re delighted to share three new wines — each with its own story, history, and sense of place. From the freshness of the first wine of the vintage to the depth of our oldest vines, these releases reflect both our land and the people who tend it.

A bottle of Wollersheim's 2025 Ruby Nouveau, glistening in the sun, surrounded by bright orange leaves, with the Wollersheim oak bent in the background.

Ruby Nouveau – November 20th

Wisconsin’s take on the classic Beaujolais Nouveau, our Ruby Nouveau is released each year on the third Thursday of November — a nod to Winemaker Philippe’s home region in France. Made from estate-grown grapes using whole-berry fermentation, this is the very first wine to emerge from our fall harvest.

The 2025 vintage is bright and expressive, with notes of violet and tart cherry that make it especially fitting for holiday dinners. Fresh, lively, and meant to be enjoyed young, Ruby Nouveau captures the spirit of the season in every glass.

A bottle of Wollersheim's 2024 Domaine Reserve, standing proudly on a rock with Field 1 in the background, the field the Reserve's Maréchal Foch grapes are grown.

Domaine Reserve – November 20th

Our Domaine Reserve is crafted from the Maréchal Foch grapes grown on Field 1, the oldest vines and steepest slope on the estate. Traditional fermentation brings forward spice, mulberry, and blackberry, and the wine is aged for one year in French and American oak in our underground cellars.

Each vintage reflects the story of its growing season and can age beautifully for 5–15 years. Rich and layered, this wine is an ideal companion for a special meal, especially alongside beef or venison.

A bottle of Wollersheim's Eagle White wine, which is white wine in a dark brown bottle and a white label, like a bald eagle. It also sits high on a rock with a bare autumnal tree and the winery in the background.

Eagle White – December 5th

Eagle White is an estate-grown semi-dry white wine made from St. Pepin and La Crosse grapes. Naturally sweet with bright notes of pear and lemon, it’s an easy-drinking wine that feels right at home in every season.

Bald eagles are a common winter sight above our vineyards, gliding along the Wisconsin River where the dam keeps the water open for fishing. The label artwork comes from an eagle perched above Field 1 — a moment we felt honored to capture. Serve Eagle White alongside fish (the eagles’ favorite), light appetizers, or holiday dishes that call for a crisp, refreshing white.

We hope these seasonal releases bring warmth, celebration, and good company to your Thanksgiving table. More exciting releases are on the way, so keep an eye out in the coming weeks!

À votre santé!
