Wollersheim Distillery Surf Shanty Cocktail

1 ½ oz Round Top Rye
1 oz Wollersheim Vermouth
¾ oz Spiced Pineapple Syrup*
½ oz Lemon Juice

Add all ingredients to a cocktail shaker. Fill with ice and shake until well chilled. Double strain into a rocks glass filled with ice. Garnish with clove studded lemon.

*Spiced Pineapple Syrup
¾ cup Pineapple Juice
½ cup Sugar
2 heaping Tablespoons Whole Cloves

Heat Pineapple Juice over medium-low heat. Add sugar and stir until dissolved. Remove from heat and add cloves. Allow to steep for ten minutes. Strain, chill and keep refrigerated in an airtight container.
