Wollersheim Winery & Cedar Creek Winery Say Yes to Screwcaps (May 2006)

Wisconsin – Two sister wineries are embracing new technology with a progressive move to the latest bottle closure. Identifying the wine bottle package’s number one purpose of keeping oxygen away from the wine, Wollersheim Winery in Prairie du Sac, and its sister winery, Cedar Creek Winery in Cedarburg are embracing a new premium Screwcap Closure. This “new” wine technology, actually a new version of an old idea, the Screwcap, will optimize and preserve the quality and freshness of their wines. “It is all in the interest of quality, quality, quality”, says winemaker and winery president Philippe Coquard. “The specially developed tight seal makes the screwcap the ideal way to maintain the freshness and full flavor of our young wines.” This will be a gradual move as principally only the synthetic corked wines will change and the wineries will keep the conventional natural cork for the traditional aging wines such as Pinot Noir, Domaine du Sac, Cedar Creek Syrah and Chardonnay.

The move from synthetic corks to screwcap has been under consideration for some time now, and the purchase of a new bottling line this winter, which has two interchanging stations for closing wine, allows the wines to be sealed with either a natural cork or a screwcap. An aluminum tube topped with a thin plastic disc inside, the screwcap tube is dropped onto the bottle and then spun onto the grooves of the bottle forming a tight seal. A study comparing the three types of wine closures from the wine trade magazine, Practical Vineyards & Winery Management, found that a synthetic cork lets in 9.87 micrograms of oxygen per day, a natural cork lets in 5.072 micrograms of oxygen and a screwcap closure lets in only .03 micrograms of oxygen per day. “The screwcap is the absolute best closure there is to preserve the quality of the wine as science shows, and deep down we know that it is a matter of time, education and awareness for wine drinkers to get comfortable with the idea”, says Coquard.

One way they’re helping their customers get comfortable, is by releasing their brand new red wine with a screwcap, called Wollersheim Sangiovese and available May 1st. This brand new addition to the Wollersheim line is described as a full-bodied dry red wine with deep, rich, luscious, black cherry-like flavors and is the perfect example of how this new closure will help the wine retain its full fresh flavors. The Sangiovese is named after the grape with which the wine is made, and the fact that the wine is not barrel-aged places this wine among the new trend of grapey ready-to-drink red wines. The deep flavors of the wine pairs with grilled foods and the screwcap closure will make it handy to take on a picnic and leave the corkscrew at home.

In addition to the Sangiovese, the wineries will be bottling several other wines with the new closure such as the Concert on the Square Prairie Fumé, Blushing Rose, White Riesling, and River Gold of the Wollersheim wines and the Cranberry Blush, Old Mill Red, Strawberry Blush, Christmas Blush, and Cedarburg Spice of the Cedar Creek wines. Both Wollersheim Winery and Cedar Creek Winery will be using bottle hangers for the screwcapped wines sold around the state to help educate their customers on the advantages of the screwcap closure. The Wollersheim Winery and Cedar Creek Winery bottle hangers state “We are optimizing and preserving the quality and freshness that our wines are known for by embracing this new premium Screwcap Closure. This is the ideal closure for our ready-to-drink wines and will ensure you have the same great wine from bottle to bottle.”
